OUR ORGANIC MEATS

Our Shop is renowned for its wide range of organic meat products, any cut of beef, lamb or pork usually being available on request. Some specialist cuts eg. T-bone steaks, brisket on the bone, sirloin on the bone, are best ordered in advance to make sure any joint is cut from meat which has hung for the correct amount of time!

All hind-quarter beef is hung for 3-4 weeks, lamb and pork according to the season. .

Bacon, collar and gammons are dry cured on the premises and offered as green or oak smoked. Prize winning sausages are made to our own original recipes, 100% organic herbs and spices and good meat cut off the bone, natural casings always being used. Both organic and non-organic but local chicken are available along with seasonable game, venison ; and of course at Christmas a full range of turkeys, geese and duck are offered but be warned, order early!

 

BEEF:

Sourcing.

Always Soil Association Organic, if not from our own farm then sourced locally from Plumpton College, K&E Dean at Udimore or S Hodson at Tunbridge Wells.

Breed.

Sussex, Sussex X, or Simmental X

Feed.

As with all Soil Association livestock diet is mainly forage based (grass, silage and hay), there are strict limits on the amount and types of supplementary feeds allowed (usually rolled oats and barley), no GMO products are permitted.

Killing and Hanging.

Both of these factors have a huge influence on eating quality. A small local abattoir is used to reduce stress and travel time; all beef is hung for a minimum of 3 weeks.

Butchering.

Any cut can be provided with beef on the bone being a speciality. Wing rib, Fore rib, Sirloin on the bone, T bone steak and Brisket on the bone are best ordered in advance. Roasting joints, frying steaks, mince, stewing steak and beef sausages are always available.
